Ingredients
- 1 Tbsp. Garlic Garlic
- 2 lbs. ground beef
- 2 eggs
- 1 can Enchilada Sauce, divided in half
- 1 1/2 Bell Pepper, diced
- 1/2 Small Onion, diced
- 1/2 cup breadcrumbs
- Salt & pepper to taste
Directions
- Preheat your oven to 350 degrees.
Set aside 1/4 can of the enchilada sauce. - Combine all other ingredients in a large mixing bowl until well blended but don’t overwork the meat.
- Place in a greased glass loaf pan and shale into a loaf.
- Bake at 350° for 50-60 minutes or until an internal temperature of 160° is reached.
- At the last 10 minutes of baking time, pour the reserved enchilada sauce over the top of the loaf.
